Tania’s Cauliflower Leek Puree

Discover Tania's alternative to mashed potatoes. Much tastier, it offers the same texture with a lot less calories and carbohydrates than real mashed potatoes that we love so much.

Recette Purée de Chou-Fleur et Poireaux

 1 large head (or 2 small) cauliflower, chopped Or use 15 oz of frozen Green Giant cauliflower rice.
 3 tbsp Earth Balance olive oil spread or Nuvel olive oil spread
 1 large leek, dark green tops removed, thinly sliced
 3 cloves garlic
 ½ cup 0% fat plain Greek yogurt (Greek or Skyrr)
 Ideal Protein potassium & low sodium Salt
 Black Pepper
 Handful of parsley, chopped
 2 green onions, choppedSeparate the green from the white stems.

Bring a pot of water to a boil. Add cauliflower and cook 12 to 15 minutes, until soft. Drain and set aside. Or use Green Giant Cauliflower Rice ready to use.

While cauliflower is cooking, melt Earth Balance or Nuvel olive oil butter in a sauce pan. Add leeks, white stems and garlic, and cook for about 8 minutes, until softened, being careful not to burn garlic.

Add cooked cauliflower or the Green Giant cauliflower, leeks, garlic, and yogurt to a food processor and pulse until blended. (Or put ingredients in cauliflower pot and blend with an immersion blender.) Season with IP salt and pepper to taste. If mixture is too thick, add extra yogurt or 1 splash milk. Sprinkle with parsley and green onions.
