Mashed potatoes—whether you love them or hate them, they taste like heaven. But they’re also full of butter and cream. So, they are an all-out calorie-fest. This new alternative, in addition to mimicking the texture by eliminating excess calories, provides a much bigger dose of fiber and vitamin C.

PREPARATION OF TANIA'S CAULIFLOWER LEEK PUREE:
Bring a pot of water to a boil. Add cauliflower and cook 12 to 15 minutes, until soft. Drain and set aside. Or use Green Giant Cauliflower Rice ready to use.
While cauliflower is cooking, melt Earth Balance or Nuvel olive oil butter in a sauce pan. Add leeks, white stems and garlic, and cook for about 8 minutes, until softened, being careful not to burn garlic.
Add cooked cauliflower or the Green Giant cauliflower, leeks, garlic, and yogurt to a food processor and pulse until blended. (Or put ingredients in cauliflower pot and blend with an immersion blender.) Season with IP salt and pepper to taste. If mixture is too thick, add extra yogurt or 1 splash milk. Sprinkle with parsley and green onions.
